1 cup (2 sticks) butter or margarine, softened
3/4 firmly packed brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 eggs
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 3/4 cups all-purpose flour
3 cups oats (any kind), uncooked
1/2 cup chocolate chips
1/2 cup butterscotch chips
1/2 cup chopped walnuts
1/2 cup raisins
1. Preheat oven to 350°F. In a large bowl, mix butter and sugars until light and fluffy. Add the eggs, vanilla, salt, baking soda, and cinnamon, mix until well incorporated. Add flour, and mix well. Lastly, add the oats, chocolate and butterscotch chips, walnuts, and raisins, and stir until well combined.
2. Drop rounded tablespoons of dough onto an un-greased, non-stick cookie sheet.
3. Bake for 8-10 minutes or until lightly golden brown. Allow cookies to cool on cookie sheet for 3-5 minutes, then move the cookies to either a wire rack or parchment paper to cool completely. Once the cookies are completely cooled, store in an air-tight container, to keep them from getting soggy.
