How To Make A No Bake Luxery Pie

by on February 18, 2010

Sometimes you want to have a great dessert but don’t have time to whip one together as you are cooking other things in your oven. This particular recipe makes use of the stovetop for a limited time, but most of the preparation period involves chilling the pie in the fridge. It’s a sweet homemade treat that is unique enough to have friends and family clamoring for the recipe!

No Bake Luxery Pie

Easy Luxury Pie

  • 1 can crushed pineapple with juice
  • 1 can cherry pie filling
  • 4 bananas, sliced into thin rounds
  • 1/2 cup sugar
  • 1 cup chopped pecans
  • 1 package cherry gelatin (Jello)
  • 1 tsp. red food coloring
  • 1 tbsp. cornstarch
  • 2 pie shells, baked ahead of time

Mix the pie filling, sugar, pineapple with juice, cornstarch, and food coloring together in a saucepan. Cook it until the mixture thickens (when it slides slowly off the spoon, it’s ready).

Remove the pan from the heat and stir in the gelatin. (This is why you kept all the juice from the pineapple!) Let it cool slightly, then mix in the bananas and pecans. Spoon the mixture carefully into the 2 pie shells and put them in the refrigerator to “set.”

When you’re ready to serve the pie, cut it into thick wedges and top it with a dash of whipped cream. Garnish it with a sprig of mint for a pretty presentation. Offer this with a tall glass of strawberry lemonade during the summertime, or opt for a hot cup of hazelnut coffee in the wintertime.

It’s easy as can be, but it tastes like you spent all day in the kitchen. Enjoy the compliments…and your luxurious bites of pie!
