This is a delicious recipe for caramel apples; a must-have Halloween treat. This caramel recipe makes the classic glossy, gooey coating that blankets the apples. However, this recipe is not so sticky that you will feel like it is going to pull your teeth out when you try to take the apple away from your mouth.
Ingredients:
1 ½ tablespoons butter
1 ½ cups light brown sugar
¼ cup plus 2 tablespoons water
8 to 10 apples (Granny Smith or McIntosh work well)
Popsicle sticks (the same number as apples)

1. In a medium sized sauce pan, melt the butter. One the butter is completely add the brown sugar and the water. Stir the ingredients until they come together in a smooth consistency.
2. Gently bring the butter and sugar mixture to a boil, then cover and allow to simmer for 3 minutes, or until the the sides of the pan get steamy and the caramel mixture is thin be fairly sticky. Remove the pan from the heat.
3. Push the Popsicle sticks through the center of the apples. Swirl the speared apples in the caramel syrup until completely coated. Place the apples on a wax paper-lined cookie sheet to cool. Refrigerate the coated apples for at least 2 hours.
4. (Optional) If you want the caramel apples coated with nuts or sprinkles, simply roll the apples in the accent right after the caramel, prior to the apples cooling. After adding any additional topping that you want on the apples place them on a wax paper-lined baking sheet and refrigerate them for at least 2 hours.
Makes 8 to 10 servings (depending on the number of apples used).
