How To Make Cheesy Corn Pudding

If you are looking for a delicious side dish to go along with the turkey for Thanksgiving, this corn pudding recipe is extremely easy and delicious.  Of course, you may like this recipe so much that you choose to make it more frequently that the once per year that Thanksgiving comes around.  All you need to do is combine all of the ingredients, pour them into a baking dish, and bake.  There is no cumbersome precooking of each ingredient prior to adding to the pudding mixture, which makes it a great recipe for times when you are busy cooking a large multi-course meal.

Cheesy Corn Pudding

Ingredients:

  • 2 cups fresh corn kernels  (in a pinch frozen corn will also work)
  • 2 scallions, finely chopped
  • 2 extra-large eggs, beaten
  • 2 cups milk
  • 8 ounces sharp cheddar, shredded
  • ½ cup finely ground corn meal
  • 1 tablespoon butter or margarine, melted
  • 1 red bell pepper, diced
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried sage

1. Preheat the oven to 350°F.

2. Grease a 9 x 11 inch baking dish, and set to the side.

3. Crack the eggs into a large mixing bowl.  Whisk the eggs thoroughly.  Add the milk, melted butter, corn meal, cheese, salt, pepper, sugar, and dried sage.  Whisk all the ingredients to combine.  Add the corn, bell pepper, scallions, and fresh herbs.  Stir the mixture with a spatula to ensure that all ingredients are thoroughly incorporated into the pudding mixture.

4. Pour the pudding mixture into the prepared baking dish.  Bake at 350°F for one hour.

5. Take the corn pudding out of the oven, cover loosely with aluminum foil, and allow the pudding to rest for at least 10 minutes before serving.

6. Serve and enjoy!

This cheesy corn pudding will come out of the oven browned and bubbling with cheesy deliciousness; always a winning combination.  The red bell pepper, corn, and fresh herbs will add beautiful, vibrant color, as well as nutrition to this delicious side dish.  If you make this cheesy corn pudding for this Thanksgiving dinner, it is likely that your guests will request this side dish for all future Thanksgiving meals.
