How To Make Cheddar Chive Biscuits

It is a must to have some type of roll, biscuit, or croissant on the table during Thanksgiving and Christmas dinner.  This is an easy and exceptionally delicious recipe for cheddar chive biscuits.  They are so light and flaky, they will simply melt in your mouth.  They are perfect with a little butter, dipped in the turkey gravy, or just plain.  These biscuits are so delicious, they may just be the stand out hit of your Thanksgiving or holiday meal.

Cheddar Chive Biscuits

Ingredients:

  • 2 cups self-rising flour
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup grated sharp cheddar cheese
  • 1/3 cup vegetable shortening
  • 2 tablespoons (¼ stick) butter, melted
  • 1 cup buttermilk
  • ¼ cup fresh chives, chopped
  • 2 tablespoons all-purpose flour

1. Preheat the oven to 350°F.  Grease a baking sheet and set it aside.

2. In a medium-sized bowl, use a fork to mix the flour, baking powder, sugar, and salt together.  Cut the shortening into the dry ingredients, using either a pastry cutter or a butter knife, until the mixture is roughly the consistency of cornmeal.

3. Put the cheese and chives into a small bowl and add the 2 tablespoons of all-purpose flour.  Toss the ingredients around until the cheese and chives are lightly coated with flour.  The flour will allow the cheese and chives to remain evenly distributed in the biscuit dough, rather than sinking to the bottom of the dough.  Add the cheese and chives to the biscuit dough.

4. Pour the entire cup of buttermilk into the biscuit dough at one time.  Stir the dough until it begins to come together.  Make sure to not over stir the dough at this point, or the biscuits will be tough.

5. Turn the dough out on to a flat, clean surface that has been lightly dusted with four.  Turn the dough over several times until it starts to come together in a rough ball.

6. Sprinkle the dough with flour and either roll or pat it out to a thickness between ¾” and 1″  and used a 3″ round biscuit cutter to cut out the biscuits.  Bring the dough back together and pat it back out when not able to cut any more rounds.  Continue to do this until the dough is gone.

7. Place the cut biscuits onto the greased baking sheet.  Paint the top of the biscuits with the melted butter.  Bake at 350°F for 12 to 15 minutes or until the tops begin to brown slightly.

8. Serve and enjoy!

This recipe makes 16 to 20 biscuits.
